Hi Friends!
When I first started writing about my gluten-free baking adventures, I only had about 15 recipes under my belt. Now, I have made heaps more recipes and have learned plenty of lessons through trial and error. Baking has become second nature for me, especially since I’m, at a minimum, producing two sandwich loaves per week for the family. In an ideal week, I aim to bake 1-2 items beyond the basic sandwich bread. Sometimes I’ll make an artisan loaf or focaccia, and other times I’ll make a sweet treat like doughnuts or cupcakes.
Baking has fit its way nicely into my routine, and I’m finding that I am in a good flow with it. For example, I started making my sandwich bread at night. I use a bread machine, and I find that when the bread sits overnight in it, it’s perfectly ready to be cut in the morning (just in time for breakfast). When I make something other than sandwich bread, I usually start on it as soon as homeschooling finishes. That gives me plenty of time for a dough to proof or a dessert to be ready right after dinner.
My favourite go-to gluten-free recipes are from The Loopy Whisk, hands down. I’ve tried recipes from other creators, but none match the quality of The Loopy Whisk’s. I even bought her The Elements of Baking cookbook, and it has been a game-changer for me. This cookbook isn’t like a typical cookbook, full of stories and recipes; it goes above and teaches the science behind gluten-free baking, which has been an integral part of my baking journey. I always want to know the why behind the how, and The Elements of Baking taught me exactly that for gluten-free baking. Kat even teaches about baker’s percentage (b%) and how to adapt any recipe, which opens up a world of possibilities in the kitchen!
I could continue to tell you about my baking adventure in an additional 1000+ words, or I could just entice you with photos. So here are some photos of things I’ve made so far.
Note: A majority of these recipes came from The Loopy Whisk, but not all. If this makes you hungry, head over to https://theloopywhisk.com/ and try these recipes for yourself! You’ll find that once you get the hang of one Loopy Whisk recipe, you’ll breeze through them all because they all flow the same. It makes for a much smoother baking experience!

As you can see, I’ve been busy since I started this journey almost a year ago! I’ve gained a lot of knowledge and skill in gluten-free baking, and I am proud of myself for sticking with the process, even though learning lessons can be tough. I am finding that making silly mistakes is by far the most effective way to learn – I’ve never made the same mistake twice! I’ll make another post on the silly mistakes I’ve made, so hopefully you can avoid them. And to prove that I am human and not all my baked goods are perfect, I’ll post some bloopers below:

YIKES. They look terrible, but we still devoured them just the same ;). I guess it’s all part of the adventure.
Until next time,
Jacqueline xx
